This is a recipe my grandmother likes to make. It’s great for licorice all-sort fans.
Ingredients:
200g (7 oz) plain sweet biscuits
125g butter (1/4 pound)
1 Tbsp golden syrup
200g (7 oz) condensed milk
1 cup coconut (optional)
250g chopped licorice allsorts
extra 1/3 cup coconut (optional)
30g copha*
200g (7 oz) dark chocolate (chopped)
Method:
Lightly grease a lamington slice tray.
Crush Biscuits.
Melt butter, golden syrup and condensed milk together. Stir until combined and leave to cool for a few minutes.
When cooled slightly, add crushed biscuits, chopped licorice allsorts and coconut.
Press mixture into Lamington or Slice Tray and sprinkle extra coconut on top (this is optional).
Set in refrigerator.
To ice, combine copha and chocolate and pour over slice. Or make your own preferred icing to top the slice with.
Set in refrigerator and cut into small squares when set.
* copha is a type of fat used in confectionery making that when melted is clear.
